Here is a Vietnamese chicken recipe that you can either grill for a charred smokey flavor on the weekend or quickly roast in the oven for a simple weeknight dinner.
Infused with the amazing flavor of Chinese Five Spice, this simple chicken recipe goes well with steamed rice with a side of vegetables or in a classic Vietnamese sandwich, Banh Mi Ga Nuong.
What is Five-Spice Powder?
Five-spice powder is an Asian seasoning commonly used in Chinese, Taiwanese, and Vietnamese cuisine. A five-spice blend varies by region and brand.
The most common and traditional blend contains a mixture of ground star anise, cloves, Chinese cinnamon, Sichuan pepper, and fennel seeds. Other varieties can contain ground ginger, annatto seeds, cumin, nutmeg, white pepper, turmeric, cardamom pods, or galangal.
Cuts of Chicken
At the Vietnamese deli/restaurant that I frequent to get my grilled chicken fix, they use bone-in chicken quarters, with thighs and legs attached. They are butterflied around the bone to lay flat for faster and even cooking. However, you can use any cut of chicken. In the below recipe, I’m using skinless, boneless chicken thighs that I got from Costco. If you use bone-in chicken, just cook it a tad longer.
The chicken goes on a wire rack to roast in the oven. You can also throw these babies onto the grill for a grill smokey flavor. To get that beautiful shine on the chicken make sure to give it a final basting with the wonderful pan drippings.

Instructions
- In a small bowl, mix together, oyster sauce, sugar, five-spice powder, ground black pepper, garlic, honey, soy sauce, fish sauce, and cooking wine.
- Marinate chicken with sauce for at least 30 minutes or overnight in the fridge for better results.
- Line a large baking sheet with foil to reduce clean-up. Place the chicken on a wire rack or a roasting pan on top of the baking sheet. Bake in the middle rack at 400°F for 20 minutes. Bast chicken with the pan drippings. Flip and bast the other side. Continue to cook for another 20 minutes.
- For a beautiful finish, give it a final basting with pan drippings on both sides. Serve with steamed white or in a sandwich (banh mi ga nuong).
Notes
For extra charring in the oven, transfer the chicken to the top rack and broil at 400°F for about 2 minutes or to your desired crispiness. Because of the sugar, it will burn quickly so don't walk away.
For grilling, cook for 10 minutes per side.
