Before You Decide

Prime Rib Sandwich
This prime rib sandwich recipe requires minimal reheating time equaling a butter soft bite mirroring it’s initial cook texture.
Tri Tip Sandwich
Make this tri tip sandwich by swapping out the tri tip with slices of prime rib. You could also swap out the jalapeno aioli with horseradish aioli or horseradish sauce for prime rib if you have any leftover.
Roast Beef Sandwich
This open faced roast beef sandwich is loaded with garlic bread(!), hash browns and egg. It’s the perfect breakfast recipe when you can’t wait to gobble up your leftovers. Serve it with leftover prime rib gravy if you have it!

Mexican enchiladas are a great way to use up leftover beef. Make a simple prime rib enchilada using this chicken enchiladas recipe (just add cold chopped prime rib instead of chicken).
Smoked Queso
You haven’t lived unless you’ve made our smoked queso. Throw in chopped up prime rib for a show stopper. No need to reheat the prime rib before throwing it into the mix. As the cheese melts the meat will heat.

Prime Rib Chili
The name alone conjures up the warm and fuzzies. To make, just add cold chopped up prime rib to your favorite chili recipe, or Smoked chili, during the last 5 minutes of cook time.
Steak and Ale Pie
Prime rib and puff pastry? Um, yes! To make steak and ale pie with leftover beef, just cut the meat into chunks and add it to the recipe when indicated.
Prime Rib Soup
Leftover Prime Rib Soup can be made utilizing any soup recipe calling for beef. We’re partial to adding it to Pasta e Fagioli or Beef Barley Soup.
Prime Rib Pasta
Prime Rib Stroganoff
Leftover prime rib stroganoff is an excellent choice if your meat is well done. The gravy and flavors add a bit of juiciness back to the beef. Instant Pot Beef Stroganoff is our favorite way to prepare this iconic dish. Just add the cubed beef to the Instant Pot when indicated in the recipe.
Steak Pasta
Pretty much any pasta recipe can do with some steak, especially Smoked Mac and Cheese or Instant Pot Mac and Cheese. Just add the chopped meat during the last 5 minutes of cook time. If making in the Instant Pot, once the pasta is done cooking, add the meat, stir and let sit for 3-4 minutes to warm the beef.
Steak Alfredo
To make steak alfredo using leftovers, just re-heat the prime rib using your preferred method (see our How to Reheat Prime Rib guide) and add to the top of your favorite alfredo recipe.
Asian Recipes
Chinese Fried Rice
Fried rice is one of the best ways to use up any leftover meat, including prime rib. Just chop up the leftover meat and add it in when indicated.
Stir Fry
Grab your favorite stir fry recipe, ours is Empress Chicken, and replace the main meat with chopped prime rib. If making “Empress Prime Rib”, just follow the instructions but cut down the initial cooking time of the meat to 1 minute.
Mongolian Beef
Grab your favorite Mongolian beef recipe and use leftover rib roast in place of whatever cut of beef is called for.

What To Do With Leftover Prime Rib
If you end up having leftover beef roast, the first thing you need to do is store it properly so the quality and butter-like texture stays intact as much as possible.
To store, wrap the roast, or slices, in plastic wrap followed by an airtight container. Place in the refrigerator for up to 4 days.
